Spam Champs
I don't like Spam in my inbox, but I don't mind it from a can.

Me and my son entered the Spam cooking contest at the Del Mar fair this year and we won fifth place! (my boy was glad we didn't win 4th because the ribbon was pink!)



Of course he was too shy to accept, so I had to mug it up all alone for the camera

Here's the recipe if you are ready to rock your taste-buds . . .



Mango Glazed Spam

12oz can of Spam
1½ cup white wine (chardonnay or sauvignon blanc)
2 Tbl Dijon (or brown mustard)
1 Tsp parsley
1 Tbl Chutney (or mango jam)
1 garlic clove
1 mango (chopped into square pieces)


Slice the Spam into quarters and then cut into ½ inch slices.
In a 12 inch frying pan add 1 cup wine (reserve ½ cup), garlic, parsley, chutney, and mustard and mix well. Bring to a boil on high heat. Add Spam and reduce heat. Cook uncovered on medium heat until sauce thickens, then turn Spam pieces and add remaining wine. Continue cooking on medium heat stirring occasionally. When sauce turns into a glaze and very little moisture remains, remove from stove. Total cooking time is 10-15 minutes. Garnish dish with mango pieces and serve Spam with cocktail toothpicks.

Yum Yum - eat it up.

If you don't want the 64 grams of fat that come with Spam, try this recipe with chicken apple or turkey sausage. It's a great appetizer.

Last night I made my sweetie Chicken Marsala (the easiest gourmet meal in the universe).

Hmmmm . . . notice how all my recipes involve alcohol in some way?

I have never had spam, is it like the sausages that come in canned spagetti?

No, it tastes more like ham than sausage.
